A short and simple explanation of the difference between liquid culture and spores is the process after inoculation.
Spores undergo a process known as germination which occurs within the first 2-3 weeks after inoculation. During this process, two compatible spores are coming together on the same grain. Spores are usually more readily available and are much hardier when being stored for a prolonged time.
Liquid culture does not undergo germination. When possible, we recommend liquid culture for the fastest growth. There are also a number of other benefits: your mushroom flushes tend to be fuller and more synchronized, and you have a pretty good idea of the final product you're going to get.
